I envy those people who get up bright and early in the mornings, brew a fresh pot of coffee and perhaps utter their daily mantra. They wake up energized and ready to get on with their day. The sun is their friend and the early birds their cohorts. Some are not so lucky.
A slow cooker may not be my best friend but it comes a close second. As I never have the time in the mornings because I’m up all night doing work or chores, I mostly used to just settle on frozen microwaveable food.
For the unfortunate few whose usual breakfast consists of hastily made coffee and a sloppy bowl of cereal, there is one great way to get a plateful of scrumptious french toast as soon as you wake up. This recipe is so easy, you might not be able to resist having french toast every day!
1 loaf of bread
6 medium eggs
1 1/2 cups milk
1 tsp. cinnamon
2 tsp. vanilla
pinch of salt
*You may add ground nutmeg and/or maple syrup into egg mixture if you so desire
- Coat slow cooker with oil
- Whisk eggs, milk, cinnamon, vanilla and salt until smooth
- Line slow cooker with loaf bread pieces and pour egg mixture over bread until they are saturated
- Cover with the lid and cook on high for 2 hours
